When I was a little girl growing up in an African country where we could not get a lot of supplies that would be quite easy to buy for most people at the local supermarket, we had to make everything from scratch. Things that people just take for granted we treasured, and we made the best of everything we had and was able to buy at the time. The one thing that was plentiful though were peanuts, or groundnuts as they were also known, and so we made our own peanut butter, and from that peanut butter my grandmother showed me how to make her scrumptious "no-bake Peanut Butter cookies". They were easy to make, and absolutely delicious, the smell of the peanut butter and the taste of the cookies were enough to make your tastebuds dance for joy, and your five senses had a party.
I have given you not only my grandmothers recipe for "No-bake Peanut butter cookies" as well as our recipe to make your own delicious peanut butter.
1. Grandmas Peanut Butter Recipe.
_____________________________
You will need: A food processor or a grinder
A clean Jar to put the peanut butter into.
Ingredients:
2 cups or 500gm roasted Peanuts (See tips)
1 - 2 tablespoons of oil (see tips)
TIPS:
You may use shelled or unshelled peanuts, whichever you prefer and find easiest to get.
You can also get roasted or raw depending on your taste. For maximum taste, spread the
already shelled peanuts onto a baking tray, roast in a cool oven for about 20 minutes,
the red skins should then easily rub off with a cloth or your fingers. This method of
roasting your own peanuts does not apply if you have purchased roasted nuts.
You may use any vegetable, canola or peanut oil for the recipe. Do not use olive oil or
an oil with a flavour as your peanut butter will have that taste, so the tasteless the
oil the better.
Making the Peanut Butter:
Grind the peanuts in the blender, if you want crunchy peanut butter leave the nuts a bit
course and for smooth peanut butter shop them up finely. Add the oil a few drops at a
time and mix well with a wooden spoon or the blending attachment on you blender. Add
enough oil to suit the texture you want the Peanut Butter to be. You may add salt to
taste, or a bit of brown sugar.
Bottle the Peanut Butter and keep it in the fridge for up to 3 months.
Its absolutely yummy.
