SATURDAY BRIGHT SPECIAL
Ah! We love Saturday mornings! Who doesn't enjoy the once-a-week opportunity to sleep late, patter around in pajamas and whip up a batch of delicious pancakes? Folks used to call these flapjacks. How fun is that?
Here's our favorite family pancake recipe. It's easy and so yummy.
INGREDIENTS:
1 egg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon granulated salt
2 tablespoons vegetable oil
1 cup flour (unsifted)
1/2 cup milk (approximately)
1 teaspoon vanilla extract.
INSTRUCTIONS:
Crack egg into a large mixing bowl. Beat it well with a whisk.
Add baking powder, baking soda, salt and oil. Mix thoroughly, until batter begins to fluff up a bit.
Stir in flour. Beat well.
Gradually add milk, until pancake batter reaches your desired consistency. A thicker, stiffer batter will produce thicker pancakes. For thin, crepe-like pancakes, add a bit more milk.
Blend in vanilla.
Heat a griddle or skillet, and grease it well with vegetable oil spray. (Caution: Do not spray on or near a lit stove!)
Pour batter from a small measuring cup (about 1/3 cup at a time) onto griddle or skillet. Cook pancakes over medium heat. Flip pancakes when bubbles form and pop.
Serve immediately with maple syrup or fresh fruit.
