I guess you could say I have a very hungry mind and it creates every recipe I make...
I never know what I want so I just make what looks and sounds good to me that night.
I have over one hundred recipes in my box and counting, so today I will share one with all of you. My family actually request allot of them for family get to gathers so I know they are worth all of you trying. This recipe is enough to feed five and have a little left over.
Needed:
1 and 1/2 to 2 boxes of rigatoni
3 to 4 14.5 oz cans of diced Italian style tomatoes
Approximately 3 Italian sausages (I use mild)
1 bag of Mozzarella cheese
1 container of regatta cheese
1 teaspoon of Italian seasoning
Garlic powder to taste
1/2 teaspoon salt
1/2teaspoon pepper
Directions: First preheat your oven to 350, then in a medium frying pan put a half cup water with a fork poke holes down the length of the sausage. Place them in pan and heat to simmer, when skin is white take them out and slice the sausage into inch pieces. Then dump water out and with about a teaspoon of extra virgin olive oil in frying pan brown your sausage. While browning your sausage bring enough water to boil and cook pasta to desired texture. In a glass casserole dish or baking dish pour your tomatoes and regatta cheese when sausage is done add to dish as well as your pasta. Then add garlic, Italian seasoning, and salt/ pepper. Stir it all together mixing ingredients well cover top with mozzarella. Then bake at 350 degrees until mozzarella is melted and a little golden and you're done. Bake time is approximately 30 min.
Of course if you want to make smaller portions just cut down amount of all ingredients.
A meal the whole family will love in 45- 50 min.
