Creative Mexican recipes for potluck parties

Nothing beats the spicy richness of Mexican Hot Chocolate. This delicacy has been enjoyed since Aztec civilization and has become more rich and sweet with each passing year. You'll get rave reviews at your next potluck by making Slow Cooker Mexican Hot Chocolate. It is fast, easy, and unbelievably yummy. No wonder the Aztec Gods believed their chocolate magic. You will need only a few inexpensive items that can be obtained at your local grocery store.

First, figure out how many people you will serve. This is going to help you figure out how much chocolate and milk to purchase. There are more complicated versions which require the mixing of all the spices, chocolate and sugar, but this recipe is a quick version for the busy party host.

Start with Mexican Chocolate tablets that can be found in either the ethic foods or baking sections of most stores. There are several brands available and even Nestles now makes one. Purchase enough packages for the number of people you will be serving. You will also buy enough milk to make the appropriate amount. You will need a pint of whipping cream and New Mexican Chili powder.

Begin by beating your whipping cream and adding a little sugar and vanilla to sweeten. Cover and place this in the fridge until ready to serve the chocolate. Take a slow cooker and add about 4 cups of milk and the appropriate number of chocolate tablets. The low ratio of milk will initially create a decadent syrup. This insures that all the chocolate and spices are dissolved and avoids clumping. Add the remaining milk and stir until incorporated completely. You now have the basic hot chocolate.

I usually use an egg beater to whip the chocolate for richness. Now you are going to add the chili powder by teaspoons and stir, smell and taste until it reaches the appropriate flavor. It should have a bit of heat, but the chili should not overpower the chocolate. Sometimes it is hotter than others, but I've never had complaints. If there will be children, a milder flavor can me made as opposed to hotter for an adult party.

Just bring your slow cooker of Mexican Chocolate to the party, plug in and place on low. Serve the Mexican chocolate with a small dollop of whipped cream, a sprinkle of cinnamon and enjoy the compliments. This one is sure to be a crowd pleaser. Make sure to give a nod of thanks to the Aztecs, they can be rather finicky about manners.
