Cocoa Bourbon Balls

This recipe is a favorite of mine. It's pretty forgiving. You can substitute several of the ingredients. Experiment and see what ingredients you like best.

Ingredients:
1 cup vanilla wafer cookies, finely crushed
1 cup confectioner's sugar
2 tablespoons cocoa
1 cup pecans, finely chopped (or walnuts)
2 tablespoons light corn syrup
1/2 cup bourbon (or other liquor)

Directions:
I usually double the recipe. That works fine, and they go fast.
Put the vanilla wafers in a zip lock bag and use a rolling pin or wine bottle to crush.
Combine and mix the dry ingredients.

Add the corn syrup and bourbon and mix well. (You can also use rum or brandy or whiskey, maybe Southern Comfort. Cheap liquor won't make any difference.)

Wet your hands and shape the mixture into small balls. This recipe makes about 36.

You can roll them in nuts or sugar or cocoa powder or finely chopped nuts. I usually don't roll them in anything.

I place them on a marble pastry board until they dry.

Store them in an airtight container.

They are best after they sit for a couple of days or longer.
