Recipes: Irish stew

Sitting here looking out the window and working on the computer and watching it snow AGAIN brings to my mind the longing for a good hearty stew to keep you warm. whether it be Irish or some other really doesn't make that much difference but just a good hot healthy stew sounds really good.

IRISH STEW

2 tbsp oil
4 large onions, cut in wedges
5 large carrots, cut in thick slices
2 ribs of celery, sliced
1 1/2 pounds of round steak, sirloin steak or stew meat
6 large potatoes
1 cup water (I like to use a cup of Guinness)
salt and pepper to taste

Heat the oil in a large pan. Saute the onions in oil. Add carrots and celery. Cook for a few minutes. Cut meat into 1/4 to 1/2 inch cubes. Add to onions carrots and celery. wash, peel, and slice potatoes. add to the rest. Pour in the water or Guinness and season to taste with salt and pepper. Bring to a boil and skin off any foam.. Reduce heat and simmer until meat and vegetables are tender.

Serve with some good crusty bread and maybe some good Irish cheese of some kind. Whatever you like will work.
