I don't know if these are really any more Christmas Cookies than any other time of the year but they are good and I have given them for Christmas presents and have never had them re-gifted back so that is good enough for me.
CHOCOLATE COVERED CHERRY COOKIES
1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup butter, softened
1 cup sugar
1 egg
1 1/2 tsp vanilla
1 10 oz jar of maraschino cherries
1 6 0z package of chocolate chips
1/2 cup sweetened condensed milk
1/2 cup chopped pecans (optional)
Preheat the oven to 350 F.
In a large bowl, stir together flour, cocoa powder, salt, baking powder, and baking soda. In a mixing bowl, beat together butter and sugar on slow speed until fluffy. Add egg and vanilla and beat well.
Gradually add flour to the creamed mixture. Beat until blended. If desired, add nuts here and mix in the dough. Shape into one inch balls. Place on ungreased cookie sheet. Press down the center of the dough with the thumb.
Drain the cherries, reserving the liquid. Place a cherry in each thumb print. In a small saucepan, heat chocolate and sweetened condensed milk. Add reserved cherry juice. Glaze the cherries with the sauce. Bake 10 minutes.
These are great while still warm with a big glass of ice cold milk. Be careful though because you will eat way too many if you don't limit yourself. They are one of my favorite cookies.
