Who doesn't like a good pound cake? we a, now that cranberries are good for us so why not make a cranberry pound cake. I found this in some of Mom's old recipes and I quite frankly don't remember her making it. Must have got the recipe after I was out on my own. I had to try it once before I could make it for Christmas. Turned out to be a delicious pound cake.
CRANBERRY POUND CAKE
1 10.75 ounce frozen pound cake
3/4 cup cream cheese, softened
1 tbsp powdered sugar
1/2 cup fudge sauce
1/2 cup English toffee bits
2/3 cup Ocean Spray Jellied Cranberry sauce
Whipped Cream or ice cream (optional)
Cut pound cake in thirds lengthwise. Beat cream cheese and powdered sugar together until light and fluffy, using an electric mixer. Heat fudge sauce in microwave on HIGH for 30 seconds or until smooth and spreadable. Place cranberry sauce in a small bowl and beat with a fork until smooth.
Spread generous 1/3 cup cream cheese on bottom piece of the pound cake. Next spread 1/4 cup hot fudge sauce. Sprinkle with 1/4 cup toffee bits. Gently spread with 1/3 cup cranberry sauce.. Set aside
Spread the middle piece of the pound cake with remaining cream cheese followed by 1/4 cup hot fudge. Sprinkle with 1/4 cup toffee bits. Gently spread with 1/3 cup cranberry sauce. Place on top of bottom layer.
Place top piece of pound cake on top of layers. wrap cake in foil and refrigerate overnight. When ready to serve, cut into slices. Serve with whipped cream or ice cream.
This is really good and pretty easy to make. Makes a dessert that is a little different for the holidays.
