How to make a great sandwich

Toast and or cereals again, have you ever wanted to try something filling and different for breakfast? A sandwich you say, well do I a recipe for you. It is my open faced egg and tomato sandwich, and it will do just the trick for you. Not long to make, and a wholly satisfying way to start your day.

The below ingredients makes two open faced sandwiches. Remember to only use the freshest ingredients.

2 slices of whole wheat bread (must get your daily fiber)
3 hard-boiled eggs
Ripe vine tomatoes
Hummus (ready made versions available at your grocery store)
Drizzle of extra virgin olive oil
Sea salt, pepper and paprika to taste

Hard-boil the eggs in whatever method you want, just as long as they have a firm center. Once done, cool down in cold running water, shell and place aside.

Next you'll do the toast according to taste. For this recipe, I prefer a nice, crunchy, just under-burnt texture. While toasting is in progress, cut the tomatoes into nice slices, and place aside.

Once the bread is done, spread the hummus on both slices, and lay the tomatoes on top, as many as can cover the bread (usually 2-3).

Here you salt and add the drizzle of olive oil on top of the tomatoes. Now slice the eggs and lay these on top. Here you add the pepper and paprika.

You are now ready to open wide and enjoy your very filling and different kind of breakfast.
