My son, who joined the Marine Corp, was in boot camp at the time when he called home, his troop had won the day drill competition and they were allotted a 3 minute phone call home as a reward. We didn't have much time to talk and he didn't waste it on how miserable the Marine's boot camp was, instead he wanted to know what I was making for dinner. I told him Pasta, he then wanted more information; he wanted me to describe what was in the sauce and everything about it so he could get a good visual and virtually taste it. He continued on telling me the thing is misses the most besides his family was some good home made food. I assured him that as soon as he got home from Boot Camp I would cook him anything he wanted.
The day he arrived home from boot Camp, he was looking forward to eating until his hearts was content. I made up this recipe knowing what it is he loves the most, and he was in heaven when he took his first bite and has thus become his favorite dish.
As his military career continued he returned back from the Iraq war and this was the dish he requested to eat when he got home and told me he though about while at war and would have given anything to have some over there, he even told his buddies about it as they sat around reminiscing about their favorite home made food from their Mom's.
I call it "Chunky Italian Sausage Sauce" my hungry Marine son loves it!
3 lbs mild Italian sausage(skin removed) and cut in chunks
1 Large onion
3 Bell peppers (1 of them red)
10 Garlic (crushed and chopped)
2 Small cans of tomato paste
1 C chicken stock
1 C wine (red or white)
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1/2 teaspoon oregano
Salt and pepper to taste
Directions:
Brown sausage in Large sauce pan add garlic cut peppers and onions into chunks stir and cook a couple minutes (until onions are transparent) add tomato paste, chicken stock, wine and seasoning, stir well cook additional 15 to 20 minutes longer. Adjust thickness with stock or water salt & pepper to taste. Serve over pasta or rice.
For variations: Fresh green beans or eggplant may be added the same time of bell peppers.
This sauce is really good and can be jarred up and given as a gift to someone it's that good and very easy and quick to make.
