Would you say that a no bake cookie is a summer time cookie? If you don't have to bake it the oven doesn't put out a bunch of heat in the house. Now days people have to think about those things. I really don't think that there is such a thing as a BAD cookie but some are a lot better than others. And cookies that you can make and not have to heat up the oven and the kitchen are even better unless it is in the middle of a blizzard somewhere. These are one of my very favorites. Kind of a variety of the old rice crispy squares but these are much better. You usually have to go to a store like Whole Foods or a natural food place to find pecan or cashew butter and it isn't cheap but boy is it good in these cookies. It is definitely worth the effort and the few extra dollars if you can find it.
BILL'S FAVORITE COOKIES
1 cup corn syrup
1 cup Splenda
1 cup pecan or cashew butter
6 cups of cocoa crispies
2 cups butterscotch chips
In a saucepan cook the corn syrup and the Splenda till it begins to boil. Stir it often. Stir in the pecan or cashew butter. Mix in the cocoa crispies. Mix the cereal in well and then spread in a buttered 13 X 9 X 2 baking dish. Melt the butterscotch chips over low heat stirring till smooth. Spread over the cereal bars and refrigerate till ready to serve.
There are a lot of ways you can change these to your specific taste but this is my favorite. With the pecan butter it is kind of like inexpensive turtles. They never last long around here when I make them. I like to use dark chocolate chips sometimes in place of the butterscotch chips
Have a couple of these with a big cold glass of milk or a good cup of fresh coffee.
