I'll start with the easiest answer: use glass or pastic hoods on the top of the tank so there is NO WAY for the fish to jump out!
Now, the more complicated answer: If your fish are jumping out, there is generally an environmental reason. Therefore, you should check the pH of the tank, make sure filters and pumps are working properly, check the temperature (too hot? too cold?).
If, after you've checked all the above, everything is working properly, and you still have problems, you need to consider that your tank may be too small or overcrowded. In the first situation, you have two options: get another, LARGER tank or take you fish to a pet store and trade for one smaller! In the second situation, again a larger tank, or thin out the fish; sometimes, just one fish too many is enough to throw off the tank balance.
