Excel can pull all of your information together in spreadsheets for review or easy uploading. I am going to cover a few areas of eBay seller's needs that can be met by using Excel software.
Inventory - If you are quite savvy with Excel you can create your own template in Excel to track inventory and costs of goods sold but if you aren't you can easily locate a basic template named "Inventory/cost of goods sold analysis" with a search on www.office.microsoft.com.
Listi ngs If you want to post your listings through an Excel you will need to follow the guidelines set out by eBay which you can find by searching eBay's help for "uploading listings via xml". Under the topic "CSV File Specifications for Uploading Inventory Data" number 2 explains how to download the template which must be used for uploading in .csv format. Once you have the template you simply fill in the cell with the data for each product save and follow their directions for uploading. I do believe however that they have a minimum requirement of listing x number of products a month or being having a Selling Manager Pro level store to do this. Also they only allow up to a file of 15MB to be uploaded.
Product Pricing Comparison Again if you are very Excel savvy you can do the formatting yourself and create formulas to compare listings by their costs and profit levels to determine the best listing format for that product to produce the best profit result for you as a seller.
If you are not that savvy you can join forums for freelance development or skilled workers that are extremely good at working with spreadsheets and post an ad for hire with details explaining what you want the templates to do and review bids on your job to find someone qualified and within your budget to create these templates for you.
Before you do this I would suggest searching with Microsoft's Office Online Template section. They offer a large variety of business and personal templates that you might be able to make work for free.
