Recipes: Pumpkin cookies

Pumpkin Power Cookies

Pumpkins are a bright orange color, because they are loaded with beta-carotene. They are low in calories, high in fiber, and have no cholesterol. Pumpkins contain lutein and ziazanthin, which keep your eyes healthy. Pumpkin is also a good source of vitamin C, vitamin A, and potassium.

Small pumpkins are better for eating, while the large ones are better for Jack-o-Lanterns. Fresh or canned pumpkin can be used in recipes to provide pumpkin power.



Pumpkin Power Raisin Cookies -

1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2/3 cup soft butter or oil
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/4 cups canned or cooked fresh pumpkin
1 teaspoon vanilla
1 cup raisins
1 cup oats
1/2 cup walnuts or almonds, if desired

Use spoon to blend flour, baking powder, soda, salt, cinnamon, and nutmeg.
Mix butter with sugars.
Add eggs and stir well.
Add pumpkin and vanilla.
Add flour mixture and stir well.
Add raisin, oats, and nuts.
Use teaspoon to place on greased cookie sheet.
Bake 12 minutes at 375 degrees

Enjoy these cookies. Do NOT give to dogs. Raisins are NOT good for dogs.
