Here is a biscuit that is a little different than the normal run of the mill biscuit and it is absolutely delicious with butter and honey. I like to take the butter and honey and mix it with some cinnamon to use on the delicious biscuits. I almost always double this recipe when I make them because everybody in my family loves them and it is a good way to get the grandkids to eat sweet potatoes.
Both of them will eat a little sweet potato but they will flat chow down on these biscuits with butter and honey on them. I like them really well with a good pork chop or pork roast.
SWEET POTATO BISCUITS
2 cups cooked and mashed sweet potatoes
1 stick of butter, melted
1 1/4 cups of milk
4 cups self rising flour
A pinch of baking soda
3 tbsp of sugar or Splenda
Mix together sweet potatoes, butter, and milk until well blended. Stir in flour, baking soda, and sugar. Shape dough into a ball and knead 8 to 10 times on a well floured board. Roll the dough out to 1" thick and cut with a 2" biscuit cutter.
Bake in a greased baking pan in a 400 F oven for 15-20 minutes or until golden brown.
These are simply delicious served hot with a cinnamon honey butter to spread on the hot sweet potato biscuits. Try them, I think you will like them.
