The very first thing to do when cooking vegetables on the grill is to make sure that the grate or cooking surface is as cleans as possible and is free from all debris. Vegetables are to be considered just like flowers they are fragile and delicate and need to be handled and cooked with care. If your surface is clean and in good shape then your vegetables should be that way as well. With a clean surface the vegetables will hold together better without creaking and falling apart.
There are some really neat pans available on the market specifically for grilling your vegetables. If you have small pieces of vegetables that you will be cooking then put them in one of these pans with special holes in the lid that are specifically designed for this purpose. You can also use a skewer for great results when cooking vegetables on the grill.
Remember that vegetables like broccoli, tomatoes, cauliflower, and fresh snow peas have a high water content so they are going to quick much faster than vegetables with low water content such as potatoes, or carrots. When you cook your vegetables make sure you are not cooking them on the same high extreme heat in which you are cooking your meat. Vegetables require a low to medium low heat.
