Most people today are very health conscious and grilling food is a great alternative to a great tasting meal. It also a really good way to get children to eat their vegetables.
Grilling vegetables is also inexpensive. Choose fresh veggies from the produce aisle such as yellow squash, zucchini, red and green peppers, onions, potatoes and corn on the cob.
Grilled or roasted corn on the cob is a favorite in our household. It is very simple to prepare.
1. Soak corn in cold water for about an hour.
2. Remove one layer of the shucks.
3. Place on the grill with medium for ten to fifteen minutes.
Other additives are optional, but you may find the natural sweetness of the corn to scrumptious that there may be no need to slather anything all over it. It is always the first to go.
Potatoes are very simple to prepare. I like to make a healthy dish of french fries on the grill using them. Take a sheet of foil, spray with nonstick cooking spray, slice potatoes and sprinkle with your favorite seasoning. Spread on sheet of foil and lay it on the grill for about twenty minutes and turn them occasionally.
Another great option is to make veggie kabobs. Chop up your squash, peppers and onions. Place on skewers then grill for about five minutes. Remove and spray on some I can't believe it's not butter. Enjoy!
