Make sure the store and it's employees appear to be clean. If the employees are walking around with dirty uniforms and the work surfaces appear to be dirty, then you might want to grab a microwave meal instead of a rotisserie chicken.
The chicken you choose should appear completely cooked but not over-cooked and dry. The skin should be dark brown, not burnt and black. You should always trust your instinct and choose the one that appeals to you both visually and price wise.
While you're in the store grab a bottle of dried mixed herbs, the store brand is usually the cheapest and will work fine. (It's on the food seasoning aisle by the salt - it's dirt cheap and can be put on almost any meat or vegetable).
When you get home, remove the chicken from it's wrapping and place it in a baking pan - put it uncovered in the oven at a low temperature (about 150 degrees) for at least 20 minutes.
This will make the skin crispier, sometimes the skin becomes wet and soft from sitting in it's juices in the plastic bag that rotisserie chickens usually come in.
While your heating up the chicken, you can put a tablespoon of butter in a pan on the stove and put some frozen vegetables in it. Sprinkle a bit of dried mixed herbs over the vegetables as they sizzle in the butter, make sure to stir it up often - this only takes 3 to 5 minutes.
If you don't have the time to crisp up your chicken or maybe you don't have access to an oven, then dish up the chicken and warm up the bits your going to eat in the microwave for a couple of minutes just to make sure it's completely cooked. That's it, enjoy!
