I have the BEST ever recipe for a 'cooked salad'. Truly, it's a vegetarian and weight watcher's delight. It is delicious, and can contain zero to two WW points for those who are watching their weight.
You need the following vegetables (quantity is irrelevant) make as much as you want, because, believe me, you'll keep on eating it plus it's good for you. Capsicum (green/red peppers), eggplant (aubergine), green beans, zucchini. Clean all your vegetables and cut them to desired edible size.. not too small or cubed.. just nice bite size pieces.
Firstly,boil the beans because they take longer to cook, then after say, 5 minutes of boiling, add the remainder of the vegetables. Add salt to your taste. Make sure not to overcook them!
Drain and put in fridge.
In a pan put some olive oil, garlic, white vinegar and MINT leaves (dressing) and cook till it starts splattering. Take veggies out of the fridge and add the dressing. Put back in fridge and cool it down.
Eat cold as a salad. It is TRULY delicious. Please try it and let me know what you think.
