Recipes: Fast and easy boneless chicken breasts

Boneless skinless chicken breast are very good for you because they are low fat and low in carbohydrates. They can be fixed just about anyway you can imagine from smoked or grilled to cooked in a casserole with many different varieties of sauces and added veggies. You can also cut the up and use them in stir fry. They are also very good cooked on the grill or barbecues in the smoker. (Not quick though) This recipe is very tasty and fairly easy to make and always goes over well wherever I take it as well as at home.

CHIPOTLE-CHICKEN CASSEROLE

2 cups fresh or frozen whole kernel corn
3 cups frozen diced hash brown potatoes
1 14 1/2 oz can diced tomatoes with basil, garlic, and oregano
3 chipotle peppers in adobo sauce, chopped
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp dried oregano, crushed
1 tbsp olive oil
4 boneless, skinless chicken breasts
1/4 tsp salt
1/4 tsp chili powder
1/4 tsp ground cumin
1 cup shredded Colby or Monterey Jack Cheese

Coat a 2 quart casserole with nonstick spray; set aside. Coat an unheated large nonstick skillet with nonstick spray.. Heat skillet over medium high heat. Add corn;cook about 5 minutes or until corn begins to lightly brown. Add potatoes; cook and stir 5 to 8 minutes or until potatoes begin to brown. Stir in tomatoes, chipotle peppers, 1/2 tsp chili powder, 1/2 tsp ground cumin, and the oregano. remove from heat and transfer mixture to the prepared casserole.

Wipe the skillet clean. Add oil to the skillet over medium high heat. Sprinkle the chicken evenly with 1/4 tsp salt, 1/4 tsp chili powder, and 1/4 tsp ground cumin. Brown the chicken in hot oil, turning once to brown both sides. Place chicken on top of potato mixture in casserole.

Bake uncovered in a 375 F oven for about 20 minutes or until bubbly and chicken is no longer pink. Sprinkle with cheese.

These are really good with cornbread or some fried tortillas. We or I usually put a good homemade salsa and some sour cream on mine. A little guacamole goes well with it too

This is a whole meal in that you have your meat, vegetables and dairy all in one delicious casserole. I sometimes add a can of black beans to the mix. When ever your grocery store has boneless skinless breasts on sale, stock up.
