There's nothing like a bowl of hot, homemade soup on a cold winter's night to warm and comfort you. I like to experiment with foods and I came up with these ideas for homemade soup. They're easy, delicious and filling. Serve them with some crusty rolls, a salad or applesauce and you've got a quick tasty meal. These soups freeze well, and taste better the second time around. It seems like the more you re-heat these soups, the better they taste.
There are probably as many versions of hamburger soup as there are cooks who make them. I modified a recipe and kept tweaking it until I had the recipe below; it is one of the soups that my family asks for often. Since we live in the Lake Erie snow belt, soup is a frequent item on the menu at our house. After battling the elements all day, what a great feeling to come home to the aroma of fresh soup and the warmth of a hot meal. I hope you like these recipes as much as we do!
THE BEST CABBAGE SOUP
1 large can tomato juice
1 pkg. dry onion soup mix
2 small cans beef broth
1 medium head cabbage, chopped coarsely
2 cup each of chopped carrots and celery
2 small cans mixed vegetables
Put all ingredients into large pot, stir well, bring to boil. Turn heat to simmer, cook for one hour, or until vegetables are tender. Delicious!
HAM AND CHEESY CAULIFLOWER SOUP
1 16 oz. bag of frozen cauliflower
1 small can cream of celery soup
1 small can cream of mushroom soup
2 1/2 cups milk
8 oz. cooked, cubed ham
2 cup shredded sharp cheese
Cook cauliflower until crisp-tender, drain. Combine soups and milk, mix until well blended. Add cauliflower to soup mixture, mix. Add ham and cheese, stir well to blend. Heat until hot and bubbly, serve. Makes 6 8
servings
HAMBURGER SOUP
2# ground chuck
1 package dry onion soup mix
1 15 oz. can beef broth
1 large can tomato juice
2 15 oz. cans mixed vegetables
3 15 oz. can cannellini beans, (white kidney beans)
Brown ground chuck, drain off fat. Add rest of ingredients, bring to boil. Lower heat to simmer, cook for 20 30 minutes.
