Recipes: Halloween-themed food

We hardly used to celebrate Halloween because it is one of the holidays that does not fall on our social calender but couple of people here and their are celebrating it of late me included although it is not wildly celebrated in Kenya but am sure most of my friends who are not into Halloween will love this Halloween inspired dish that looks good served as whole.



Ingredients:
One 5kg pumpkin,washed
4 tsp vegetable oil
1kg steak,cut into inch cubes
1 onion,chopped
3 red chillies,seeded and chopped
2 clover garlic, crushed
1 tomato,chopped
2 bay leaves
21/2cups beef stock
11/2cups red wine
500g potato/peeled and cut into 6slices widthwise
3 peaches, cut into thick wedges
salt and pepper to taste
1 cob,cut into 6 slices width wise.

Method

cut the top of the pumpkin at 6cm from the steam to make a lid.scoop out the seeds and string fibers and discard.scoop out some of the flesh leaving a shell about 2cm thick inside the pumpkin.Chop up the flesh that you scooped from the pumpkin and set aside. Mix the oil,salt and pepper and grease the pumpkin inside and out.Preheat the oven to 200 degrees centigrade.Saute the beef on high heat then set aside.In the same pan, saute the onion add chillies for 5 min then add the garlic and tomato and cook for a further 2 min.Return the meat to the pan and add the bay leaves,stock,wine and bring to a boil.Reduce heat and simmer.In the meantime, place the pumpkin with its lid in a baking tray and cook in the oven for 30 minutes .As the pumpkin bakes, add both potatoes,pumpkin and corn to the stew and add more liquid if needed.Bring to a boil then reduce heat to simmer.Finally add the peach to the stew into the partially cooked pumpkin,cover with the lid and bake until the whole pumpkin is tender and cooked.Carefully lift the filled pumpkin onto a large platter and serve whole.Cut into wedges at the table..

Try it with mashed pumpkins

Ingredient
1 whole pumpkin
salt and pepper to taste
butter

Ingredient

cut out the outer cover ,add salt and pepper and boil till its well done, drain the water add some butter and mash.serve as a side dish
