This a great seafood salad and as far as I am concerned shrimp makes one of the best salads there ever were made. I love shrimp in or on anything almost. This is a good old Creole recipe and who knows how to make good things from seafood and shrimp than the Creoles and Cajuns?

CREOLE SHRIMP SALAD

3 green onions cut in 1 inch pieces
1/2 celery stalk cut in 1 inch pieces
2 tbsp coarsely chopped parsley
2 tbsp canola oil
1 tbsp horseradish
2 tbsp white vinegar
1 garlic clove cut in half
2 tsp Dijon mustard
1 tsp paprika
1/4 tsp salt
1/4 tsp white pepper
Dash hot sauce
2 lbs medium shrimp cooked, peeled, and deveined

In a food processor, process all the ingredients but the shrimp until fairly smooth. Transfer to a large bowl.

Toss the shrimp in the dressing. Chill a couple hours. To serve, line six plates with shredded lettuce or your favorite greens and then divide the shrimp on he top.

This is a very good salad and very healthy.
