Are you a salad person? Do you like things that are good for you and a little different? I have been a salad lover all my life and I love shrimp. Here is a recipe for shrimp salad that is a little out of the ordinary do to the fact that it has turnips in it. There are not to many recipes that I know of that have turnips in them except for turnip recipes, This is a very tasty salad and is fairly simple to prepare. Try it, I think you will find it very tasty and different.
MEXICAN SHRIMP AND VEGGIE SALAD
4 turnips, trimmed, peeled and cut into 1/2 inch pieces
1 medium carrot, peeled and cut into 1/2 inch pieces
3 tbsp olive oil
3/4 cup green salsa
2 lbs medium to large shrimp, peeled and deveined
1 medium tomato, cored and cut in 1/2 inch pieces
1 head of lettuce, separated into leaves, washed and dried
1 ripe avocado, peeled, pitted and cut into 1/2 inch pieces
4 tbsp chopped fresh cilantro
In a medium saucepan cook turnips and carrots in slightly salted water for 7-8 minutes until crisp tender. Drain and rinse under cold water. Pat dry.
Heat the oil in a large skillet over medium heat. Add salsa and cook for 5 minutes. Add shrimp and cook for 3 minutes. Stir in veggies and cook 3 minutes more until shrimp are just cooked and veggies are heated through.
Arrange the lettuce leaves on individual seving pltes. Top with the shrimp mixture and then garnish with the fresh avocado and the chopped cilantro
This salad is very good served with most any smoked meat. If you like a little bite to your salad, you could dice up a nice fresh seeded and deveined jalapeno to add to the mixture. I really enjoy the different taste that the turnips give it.
