HM, I guess it would have to be my recipe for 'Chicken Salad Extraordinary'
I start with two cooked six ounce chicken breasts. I add two tablespoons of diced cooked maple bacon. A small diced ripe tomato, a little celery, and some diced red onion. I even make my homemade mayonnaise. I sandwich this salad in between two slices of 'buttercup's' cheese, and grill it like a grilled cheese. I've always enjoyed this sandwich with a glass of cold milk and a few chips; enjoy!
Now if you'd like to make this sandwich the healthy way, just follow these modifications. Use turkey bacon instead of the maple bacon, and use you're favorite fat free ranch dressing instead of the mayonnaise. If you don't have on that you like. You can whip together, 4 ounces of none fat yogurt, sour cream, and skim milk. Season with quarter teaspoons of fresh parsley, cilantro, and sage. Add as much salt and pepper as you wish. And for blind fold testing twist, add a teaspoon of Miracle Whip, and you'll be all set.
