Every time I go out to eat, I have to fight the urge to order the Artichoke Spinach Dip. On a student budget, I just can't bring myself to fork over $8 for an appetizer. So, here is my recipe for a great Artichoke Spinach Dip. (Warning: Highly addictive.)

Ingredients:
2 boxes of cream cheese
1/4 cup fresh basil, chopped
1 box of frozen spinach
1 can of artichoke hearts, chopped (not marinated)
2 cloves of garlic, minced
1 cup mozzarella cheese
1/4 cup freshly grated parmesean cheese

Method:

Preheat the oven to 350 C. Reserve 1/2 cup of the mozzarella cheese, and add the rest of the ingredients to a mixing bowl. Mix everything well. If the cream cheese is hard to mix, microwave it until it softens. Then, put the mixture into a casserole dish and cover with the remaining cheese. Bake for 30 minutes at 350, the cheese should be golden. Serve with tortilla chips, toasted bread, veggies, or anything else you can think of.
