One absolute benefit of eating dandelion roots is revenge!
Dandelions are perennial weeds and as such will continue to emerge spring after spring in your lawns, your flower beds, pots, even in your window box, unless you remove the entire plant - roots and all.
So, as you are removing the root and the plant will die and also because the flaming things have spent their entire life existing at the expanse of your prized plants- competing with them for light, nutrients and water and probably killing more delicate specimens, why not take revenge and eat them?
Make them into coffee or better still, eat the whole plant (not sure about the flowers and stalks though). Dandelion leaves can be used to make infusions, eaten as salad greens if young and sweet and offer numerous health benefits.
Another thing- less clocks - yes, you know the fluffy round parts that the dandelion produces at the end of the flowering time. Then they break up (or are blown gently apart by some child saying ' one o'clock, two o'clock, three....)' and waft their parachuted seeds all over the place - most of them will settle in new grass, earth and flower beds and germinate and hey ho another dandelion plant appears. More, they can do this for most of the year with each plant producing about 200 progeny so never feel bad. much, crunch, stew, infuse and salivate over your next dandelion roast - eat and enjoy I say!
