Jack-O-Lantern Dip
This is a fun an easy recipe limited only by your imagination. It combines the fun of Jack-O-Lanterns with fingers foods - perfect for a Halloween party.
Ingredients:
Jack-O-Lantern and garnish:
1 small pumpkin
1/4 salt
olive oil
various vegetables - cut into bite size pieces
Dip:
2 cups mayo
1 cup milk (You want this dip runnier than usual. You'll see why shortly.)
1/4 tsp salt
1/4 tsp pepper
2 tbsp chopped onion
1 glove chopped garlic
1 tbsp dill weed
1 tbsp Worcestershire
red or green food coloring
1)Cut circle in top of pumpkin and clean out, scrapping any pulp from the sides until an empty shell is left.
2)Rinse pumpkin seeds. Use your fingers to remove all the pulp. Separating them from the pulp under running water over a colander helps.
3) Soak the seeds in a mixture of 2 cups water to 1/4 cup salt for 4-24 hours. The longer, the saltier.
4) Remove from water and toss with olive oil and more salt or any seasoning you like.
5) Spread evenly out across a cooking sheet and bake for 1 hour at 250 degrees F stirring every 15 minutes.
6) Place pumpkin shell on platter and arrange pumpkins seeds and vegetable pieces around.
7) Combine dip ingredients and mix well making sure to add coloring to get a deep red or green color.
8) Pour dip into pumpkin shell all the way to the top. If you don't have enough dip to fill the pumpkin, make more.
9) Replace lid on pumpkin (you can use crazy glue to seal the top if you wish.
10) Now you can either draw a face on your pumpkin or just serve it with a butcher knife and let your guests hack away.
When you cut into the pumpkin, out comes either green ooze or red blood depending on what color food coloring you used. This is a fun and interactive way to serve boring old vegetables and dip. But don't let this recipe stop your creativity, you can use any kind of dip. Just make sure its runny enough to ooze out of your Jack-O-Lantern. Whether you choose to carve a Jack-O-Lantern in front of your guests and impress them as it oozes green slime dip or you give them a knife and let them stab away to get at the red blood dip, its a great Halloween experience.
