Amazing dessert recipes

I was recently looking for a really nice chocolate cheesecake recipe when I came across this one in one of my mother's ancient recipe books. We held a baking party recently and I tried this recipe on my friends. WOW! The dreamiest chocolate cheesecake I've ever had (and I've had a few!). I think it could be improved a bit by using a really good 70% dark chocolate, rather than the cheap one I used.

So here is the recipe - I hope you try it and enjoy it like 10 of my friends and I did.

CHOCOLATE CHEESECAKE

9 big graham or digestive cookies or half a packet of "marie" or " tennis" biscuits
35 grams butter, melted
200 grams dark chocolate
200 grams cream cheese
170 ml sugar + extra sugar
1 tsp. vanilla sugar or 1 tsp vanilla essence
2 eggs
200 ml cream

1. Crumble the cookies and combine with the butter. Add a tablespoon or two of extra sugar
to sweeten the base and make it extra yummy.
2. Line a spring form pan or foil dish with greaseproof paper and spread the cookie and
butter mixture on the bottom.
3. Melt the chocolate.
4. Mix the cream cheese and 100 ml sugar and vanilla.
5. Separate egg whites and yolks. Mix the yolks with the cheese mixture. Add the melted
chocolate.
6. Whisk the whites in a separate bowl until the mixture is very stiff. Add 70 ml sugar and
then add to the cheese and chocolate mixture.
7. Whisk the cream until quite thick and add it to the other ingredients.
8. Pour the batter into the pan and freeze for at least 2 hours.
9. Remove the cake just before serving and decorate slices with whipped cream and
raspberries, strawberries or cherries.

You can re-freeze the cake, but don't do it too often. You'll probably find that the entire cheesecake is finished in one day!
