I am not a big lasagna fan but I really like this and it is good for you too because it has all the different kinds of seafood in it. I also use whole wheat lasagna noodles when I can find them. Whole food usually has them.. One thing that is especially nice about this recipe is that you can use any kind of seafood that you like. This recipe makes a lot so if you are having family over there will be plenty or you can freeze it for later meals.
SEAFOOD LASAGNA
1 1lb box of lasagna noodles
1 cup onion, minced
1/3 cup milk
1/3 cup white wine
1 8 oz package of cream cheese, softened
1 1/2 cups cream-style cottage cheese
1 egg, beaten
2 tbsp basil
2 10 1.2 oz cans cream of mushroom soup
2 tbsp butter
6 lbs of seafood of your choice
12 oz shredded mozzarella cheese
Cook noodles according to package instructions the drain. Combine the remaining ingredients except seafood and cheese, to make the sauce. Grease two 3 quart casseroles with butter. Layer noodles, seafood combination (shrimp, crab, lobster, scallops, clams, small pieces of grouper or snapper) and sauce, ending with sauce. Be careful not to overfill the casseroles. Top with cheese and bake at 350 F for 45 minutes. This will serve 20-24 people.
I like this much better than the normal kind of lasagna and the seafood is better for you too so it makes a wonderful meal as far as I am concerned. Serve with some good garlic bread.
