Recipes: Spinach dip

Spinach is one of the power foods recommended by most doctors to be good for most any thing. I know that a lot of people don't like spinach but it is good and very good for you. Maybe if you tried this dip, you would change your mind. It is good with the frozen spinach but it is even better with fresh spinach. If you happen to have spinach in your garden, use fresh spinach. I have spinach in my garden and I raise spinach in my Aerogrow hydroponic garden in the winter time.

HOT CHEESY SPINACH DIP

2 tbsp butter
1/3 cup chopped onion
2 cloves garlic, minced
1 3/4 cup half and half
2 packages (9 oz each) frozen chopped spinach, thawed and drained
1 cup sliced water chestnuts
1 cup shredded cheddar cheese (I use extra sharp Tillamook)
1 package of dry vegetable soup mix
1/4 cup shredded Parmesan cheese

Preheat the oven to 425 F. Melt the butter in a large saucepan over medium heat. Add onion and garlic. Cook and stir until the onion is crisp tender and the garlic is fragrant. 2-3 minutes. (Isn't garlic always fragrant?)

Stir in the flour, cook and stir an additional minute. Add half and half and cook, stirring constantly, until the mixture boils and thickens, about 2 minutes.

Remove the saucepan from the heat. Stir in the chopped spinach,water chestnuts, cheddar cheese , and vegetable soup mix. Spoon the dip into a 1 quart casserole. Sprinkle with Parmesan.

Bake the dip until it is bubbly and the cheese is melted, usually about 10-15 minutes. Serve warm with slightly toasted chunks of French Bread.

If you don't find that you like spinach this way, the I guess you just won't like Spinach at all.
