I love black beans and they are very good for you. They are high in fiber and high in anti-oxidants. The little red beans are even higher in ant-oxidants but I like the black beans the best. This is a recipe that I make in my Vita-Mix but it could be made in any high-speed food processor You can substitute most any kid of beans you want but I use red and black.
BILL'S BLACK BEAN SOUP
3 cups of chicken, beef, or vegetable stock
1 28 oz can of black beans
1 28 oz can of red beans
3/4 cup onion, sauted
3 cloves of garlic, roasted
3 tbsp lime juice
1 jalapeno pepper, seeded
1/4 cup diced red pepper
1/4 cup yellow pepper diced
1/4 cup green pepper diced
1/4 cup scallions chopped
1 tsp cumin
2 tsp chili powder
Salt and freshly ground black pepper
Place all the ingredients in the container in the order listed except for the peppers and scallions. Turn on the Vita-Mix and quickly turn it to high. Run for 6-8 minutes. It should be steaming by then. Add the peppers and scallions and run for an additional 15 seconds. Serve immediately.
This is a very good soup and is quick and easy to make if you have a Vita-Mix. It is one of the best investments I have ever made.
