Recipes: Deep-fried pineapple fritters

Deep fried anything is probably not the best thing for you but these are so good that you just have to forget that they are deep fried and enjoy them anyway.Here is a great treat recipe that I got from my Hawaiian Navy buddy. We exchange recipes quite often and many of his involve pineapple in some way. He has access to the freshest pineapple too. These fritters are really good. I raise rhubarb which he likes so we exchange the different fruits sometimes.

DEEP FRIED PINEAPPLE FRITTERS

1 cup flour (I sometimes use whole wheat flour)
1 tsp baking powder
1/4 tsp salt
2 tbsp sugar (I uisually use Splenda)
1/4 tsp cinnamon
1/4 tsp nutmeg
1 egg
1/3 cup milk
1 tbsp melted butter
1 tbsp lemon juice
1 cup shredded or crushed pineapple, drained (Fresh is best but canned is also very good)

Mix and sift all the dry ingredients into a small bowl. Beat the egg slightly and add milk and butter. Stir the liquid mixture into the dry mixture, beating until you have a smooth batter. Add lemon juice and pineapple. Mix well. Drop into hot deep fryer and fry until golden brown. Remove and pat off the excess oil with a paper towel. Roll in powdered sugar while still hot.

I always make a double batch because one recipe just isn't enough with a family that likes them like my family does. Pineapple is one of the fruits that all my family likes and I don't make them as often as I would really like to but when I do everybody enjoys them. Have a warm pineapple fritter and either a good fresh brewed cup of coffee or a big tall glass of ice cold milk,
