This is one of my favorite cookies and when we lived in Nebraska we had a friend that had several black walnut trees and we could have all we wanted. Black walnuts are hard to crack and even harder to get out of the shell but oh are they good when you do. I think that they are worth the work. Sometimes they are hard to find in a regular grocery store. I use black walnut extract in a lot of things instead of vanilla because I live the flavor but anyway, these are really good cookies.
BLACK WALNUT DROP COOKIES
1/2 cup shortening
1/3 cup butter
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/2 tsp black walnut extract
2 tbsp thick cream
2 cups all-purpose flour
1 tsp baking soda
2 cups chopped black walnuts
Sifted powdered sugar
Cream shortening and butter together. Add sugar, and cream until light. Stir in vanilla, black walnut extract, and thick cream. stir flour and soda together. add the nuts and chop them into the flour mixture. Stir into the creamed mixture. Shape into small balls the size of walnuts. Place on a cookie sheet and bake at 325 F until a delicate brown, about 20-30 minutes. When cool, roll in sifted powdered sugar.
These are really delicious with a good tall glass of cold milk or a good cup of gourmet coffee. I love dark roast Dunkin Donuts coffee.
