Tips for using sweetened condensed milk in cooking

Sweetened condensed milk should be a staple in every cook's cupboard. There are so many recipes, especially for desserts, that can be made with sweetened condensed milk, but its uses go beyond baking too. These are a few of my tried and true uses of sweetened condensed milk.

1) Make a great bar: Seven Layer Magic Cookie Bars. Melt one stick of butter in a 13 x 9 pan. Add 2 cups of graham cracker crumbs, Sprinkle with 6 ounces of chocolate chips and 6 ounces of butterscotch chips and 1/2 cup of plain M & M's. Sprinkle one cup of coconut next and then pour one can of sweetened condensed milk over the top. Bake for 25 minutes at 350 degrees. These are a fantastic easy dessert bar that works just as well for a bake sale as a for entertaining guests.

2)Use it for Thanksgiving: Pumpkin Pie Filling. Sweetened condensed milk makes a fantastic pumpkin pie filling. Mix one can of pumpkin puree with once can of sweetened condensed milk. Add 2 eggs, and 2 teaspoons of pumpkin pie spice. Pour in a ready made crust and bake for 45 minutes at 350 degrees.

3) Use it for a child's party: Cookie Pizza. Spread a tube of prepared sugar cookie dough in a pizza pan and bake for 10 minutes at 375 degrees. In the microwave melt 2 cups of chocolate chips with one can of sweetened condensed milk until blended. Spread over baked cookie crust. Top with desired toppings such as M & M's, marshmallows, peanuts, coconut or whatever topping you would like with this sweet treat. Bake another 4 minutes until marshmallows are toasted. Cool and slice like pizza. This is a popular treat for kids.

4)Use it for a soothing hot beverage: Mocha Madness Coffee: Mix 6 cups of coffee with 3/4 cup of sweetened condensed milk and 3/4 cup of chocolate syrup on the stove on low until the liquid is hot and steaming. Pour in cups and garnish with whipped cream.

5)Use in candy: Layered Mint Fudge. In the microwave melt one can sweetened condensed milk with 12 ounces of chocolate chips. Pour half in in a foil lined 9 x 9 pan. Refrigerate for 10 minutes. Melt 6 ounces white chocolate chips. When smooth stir in one tablespoon of peppermint extract and a few drops of green food coloring. Pour over the chocolate in the pan. Chill another 10 minutes. Then pour the remaining chocolate over the top. Chill 2 hours until firm and then cut in squares. This is a great bar for the holiday or a tasty after dinner mint.

6) Use in salad dressing: Picnic vegetable salad. Cook a one pound box of shell macaroni and chill. Add an assortment
