Vegan haunted House cake
This is my simple way of making a haunted house cake for Vegans. I've made it before but if you're good at making cakes and want to use different amounts of the ingredients please feel free to do this.
8 cups rice flour or masa harina (corn flour with added vitamins)
3-4 cups fruit sugar or brown sugar
2 tablespoons baking soda
2 bars of carob chocolate)
4 tablespoons of margarine or vegan spread,
- 1 tea spoons vanilla essence can add more to taste but start with 1/2
1 medium box of raspberries or strawberries, can also use fruit jam for filling
Medium sized chocolate cake (6-8 servings)
Depending what kind of house you want to make you can bake your cake in different tins, Bake in 2 large round cake tins for a round house effect or bake in 2 deep square tins for a square house effect
Sift the flour and baking soda with a sifting spoon into a large mixing bowl, add the sugar and mix well.
Make a hole in the center of the mixture.
Cut up the margarine or spread into small pieces. If its already soft then add in with the mixture bit by bit.
Add teaspoon of vanilla essence.
Add in 1 of the melted carob bars bit by bit until its mixed well with the flour with no bits.
To melt the carob put in a small pan over a larger pan of almost boiling water. Stir until smooth like liquid).
Taste your mixture. If you want add a bit more vanilla essence and carob (but remember that vanilla essence can be very strong so just add it drop by drop)
Mix very well with a wooden spoon until the mixture is smooth and creamy
Separate the mixture into 2 cake baking tins, smoothing with a wooden or plastic spatula. Decide if you want a round or square cake first.
Preheat the oven on medium to high or at 350 degrees. Pour into greased and battered cake pans and bake at 350 degrees for 25-40 minutes. To test to see if your cake is done put a small sharp knife in at the top or sides (or other small sharp object). If the knife comes out clean without any cake mix on it you know the cakes ready)
Allow to cool for about 30 minutes.
Lift the 2 cake pieces out of their tins
Making sugar butter filling
Use sunflower spread, margarine or other vegan spread. Mix 3 tablespoons with 2 tablespoons of fruit sugar or brown sugar. Mix very well. Spread on 1 half of the cake and then spread the jam on one side. If you use fresh fruit cut into very small pieces and add to the side with the icing.
Note - You have to spread the fruit/jam and filling on the end part of the cake not at the top.
