Recipes: Oatmeal cookies

Loaded with oats, raisins and walnuts these lightly sweetened Chewy Oatmeal Cookies are addictive and somewhat healthier than those made from standard recipes.

1 cup soft tub margarine such as Country Crock
1 cup light brown sugar
2 small eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups old-fashioned oats, not instant or quick-cooking
1 cup all-purpose flour
1/2 cup whole wheat flour


1/2 teaspoon baking powder
1 heaping teaspoon cinnamon
1/8 teaspoon powdered cloves
1 cup chopped walnuts *
1 cup golden raisins *

Preheat the oven to 375F.

Cream the butter and brown sugar together until very light and fluffy.

Add the eggs and vanilla extract, then beat until thoroughly combined.

In a medium mixing bowl, combine the oats, flour, baking powder, cinnamon, and cloves and stir to combine.

Stir the dry ingredients into the wet ingredients until the dry ingredients are just combined, about 1 minute.

Add the raisins and walnuts, and stir until just combined.

Drop the dough by spoonfuls onto a greased cooky sheet, pressing the dough down slightly with your hand or the back of a spoon.

Bake for 8 to 10 minutes, or until the cookies turn slightly golden. Remove from the oven.

Allow the baked cookies to sit on the cooky sheet for about 5 minutes, or until the cookies are almost completely cooled.

Transfer the cookies from the cooky sheet to a wire rack to allow them to finish cooling. Repeat these steps until all of the cookies are baked and cooled. Store them in a tightly covered container.

YIELD: 3 dozen cookies

* You could substitute other chopped nuts or even a mixture of nuts and your favorite seeds for the walnuts, but the walnuts are delicious when used in these cookies.

* I used golden raisins because that is what I had on hand. I suppose you could substitute dried purple or red raisins or dried blueberries or cherries or even other dried fruit or shredded coconut instead of those to vary the cookies every time you bake them.
