What's in your favorite sandwich?

My favorite sandwich

It is really Quite remarkable with what you can come up with when you need to. At one point in my life I found myself in Dire circumstances and had to survive off of a very low budget. Which was just a little bit over nothing a week. I had to eat things a lot over and over just because they were cheap. Like Beans with Fried potatoes. Or beans with Biscuits. And to have a little break from that I would have instead Beans with Cornbread. Ha Ha. But no this is true. Beans will last forever. Cause the more you eat the less you want them. And the side dish can sometimes be the only difference of what you might have eaten yesterday and what you are going to be eating today.


Of course there are other things that are cheap and easy to make. Like pancakes. Ramon noodles. Spaghetti, or chicken ad dumplings. Green bean casserole is also not to bad or a tuna sandwich. Well I must admit having to live in those circumstance and not liking tuna much. And not being a peanut butter and jelly fan either. I was amazed when a friend looked through the fridge and started making the best sandwich and it was something I never thought about or ever even heard about. And it is so easy to make and really delicious.

Egg Sandwich
Fry an egg in a skillet with a little oil adding a little salt and pepper as it is cooking. When one side is done turn the egg over and smash the egg with the spatula until the yolk of the egg spreads all across the bottom. Cook the egg until the yolk of the egg is completely done. Then remove the egg and place it on a piece of bread. Next take a piece of American cheese, or you could use your favorite cheese if you don't like American. Place the cheese in the hot oil in the skillet till the cheese is warm about three to five seconds. Then slide the spatula under the cheese about halfway, then lift the cheese and place it on top of the egg, holding the handle of the spatula straight up with the edge just above the egg and pull the spatula back rolling the melted cheese off. The cheese will then slide easily from the spatula onto the egg. All you have to do now is put Mayonnaise onto another piece of bread and place it on top. And there you have a Egg Sandwich.

It doesn't take long to cook. And it's great when your in a hurry. I like mine on wheat bread myself with mayonnaise. Sometimes I will toast the bread and put just a little butter to soften the toast. Then I put the mayonnaise.
