Here is a good recipe I collected from my Diabetes dietitian. She is a neat lady who has three family members who are diabetic. She was a nurse but after finding three family members that had diabetes she decided to specialize in diabetes and has all kinds of good recipes that are diabetes friendly. She puts out a newsletter and always includes some recipes for us to try. Since I love all kinds of squash, this was an especially welcome recipe. I don't have room right now for much of a garden so I plant my squash in my flower bed. Heck, they are green and have big pretty yellow blossoms, WHY NOT? This is real quick to because you can make it in the microwave.
BUTTERNUT GRATIN CASSEROLE
Non-stick cooking spray
1 butternut squash
3 ounces leftover lean pork chops , trimmed of fat and thinly sliced
1 bunch of green onions, trimmed and thinly sliced
1/2 cup reduced sodium vegetable or chicken broth
1/2 whole grain bread crumbs
1/2 cup reduced-fat sharp cheddar cheese
1/4 tsp freshly ground black pepper
Lightly coat a microwave-safe baking dish with cooking spray and set aside. Pierce squash with a knife tip in several places. Microwave on high for 15 to 20 minutes or until squash is barely tender
Remove squash from, microwave and let rest until cool enough to handle, about five minutes. Cut off top. slice lengthwise and scoop out seed. Score each half into a grid of 1 inch cubes, leaving the skin intact. Then slice the cubes from the skin.
Mix together squash, pork, onions, broth and bread crumbs. Place the mixture into the pre-greased microwave dish. Top with cheese, Microwave on High for 2-5 minutes or until squash is tender and cheese is melted. Season with black pepper.
This is a really good recipe and makes a good side dish or can be used as a meal since it has both meat and veggies. You can use acorn squash if you like that better. I have also substituted garlic sausage for the left over pork chops.
