If you would like to pack more fruit and veggies into your diet while not feeling like you're eating rabbit food, why not try the delicious French crepe? Crepes are quick cooking, potentially portable, and inherently elegant.
Crepes are a form of quick-cooking bread, almost like a pancake but much thinner and not necessarily sweet. Also, crepes are much more versatile than pancakes and can be eaten as an appetizer, meal, or dessert. Crepes are made from a thin batter and cooked on either a circular cast iron griddle or a nonstick skillet. Once cooked they are rolled and either stuffed or topped with just about anything you can imagine.
Here's a basic recipe for savory crepes:
1 cup flour
1/4 teaspoon salt
1 cup milk
3 whole eggs or 2 whole eggs plus 2 egg whites
3 tablespoons melted butter
1/3 cup water
Combine all ingredients well and refrigerate the batter for an hour. Cook the crepes in a buttered cast iron griddle or nonstick skillet, by ladling just enough batter to coat the pan. Cook until lightly brown and then flip. Make sure to butter the pan between making each crepe.
To jazz up these savory crepes, add any fresh herb to the batter - chives, rosemary, thyme, etc. To get in some veggies, stuff these crepes - roasted asparagus, grilled zucchini, sauteed mushrooms, etc. To really intensify the flavor top these crepes with cheese sauce - cheddar, swiss, provolone, etc.
Serve these savory crepes for an appetizer, or for a meal serve along with soup or a salad.
The savory crepe recipe (above) can easily be made sweet by adding:
2 tablespoons sugar
1 teaspoon vanilla
Cook these sweet crepes the same way as the savory ones.
To jazz up these sweet crepes, omit the 1/3 cup water and add your favorite fruit juice - apple, grape, orange, etc. To get in some fruit, stuff these crepes - fresh fruit, fruit compote, jam, jelly, etc. For dessert purposes, stuff these crepes - ice cream, mousse, pudding, etc. And the icing on the cake, so to speak - top these little sweethearts with whatever you fancy - powdered sugar, chocolate syrup, fresh fruit, etc.
Serve these sweet crepes for breakfast or for dessert.
