I am a huge fan of potato based soups. Primarily because it gives it a "hearty" feel and is real good in the fall/winter months. The following recipe is something I whipped together on a whim one afternoon and is a family favorite. If you enjoy spicier food, you can try adding more chili peppers.
Cheesy Sausage and Potato Soup
2 lbs Smoked Turkey Sausage
1 to 2 lbs Red Potatoes (peeled and quartered)
1 lg Sweet Onion
1 lg Green Pepper
1 lg Red Pepper
2 tbsp canola oil
1 can 4oz Green Chilis
1 can Cream of Potato Soup
1 can Campbell's Pepperjack Cheese Soup
2 cups milk
1 cups Cheddar Cheese
cup beef broth
Salt and Pepper (to taste)
Peel and quarter red potatoes, and put them on to boil. Let the potatoes boil until soft (approximately 30 min). Dice the onion, green pepper and red pepper. In large skillet, add canola oil, onion, green pepper and red pepper. Saut vegetables until onion is translucent and peppers are soft. Slice smoked sausage into inch bite sized pieces.
In a separate bowl, mix cream of potato soup, pepper jack cheese soup, green chilis, and 2 cups of milk. Stir until the texture is smooth and free of clumps.
In large crockpot; combine sausage, red potatoes, vegetables and soup mixture. Blend in 1 cups of cheddar cheese and cup beef broth. Cook on high for 2 hours.
