Okra and tomatoes
Ingredients :
1. Diced okras- 1 cup
2. Big plump tomatoes- 2
( slice and boil the tomatoes in cup of water.Allow it to cool. Take out
the puree by putting it in a blender.)
3. Safflower oil for frying
4. Coriander seeds powder-1 table spoon
5. Turmeric powder- 1 tea spoon
6. salt
7. onion-shredded- 1 cup
8. Chilly powder- 1 spoon
Method of preparation :
Take a shallow pan. Pour little oil.
Fry the onions
Add the tomato puree.
Put the powders and stir till the puree becomes dark red and shrinks.
Add the okras and close it with a lid.
In a low fire let it simmer.
Stir it in between.
Remove the lid and see whether the okra is cooked.
Add some more oil if it sticks to the vessel.
This is a side dish that can be had with rice or Indian breads.
