This is a good recipe I got from a very good high school friend many, many years ago.. We enjoyed it together at many church covered dish suppers and at other times over the years. His mother was one of the greatest German cooks in the valley and she loved to cook and bake for her seven children. Every thing was either home grown or homemade including a lot of the flour and things like that that she used. She was truly an amazing lady and a great cook.
OVEN BARBECUED ROUND STEAK
3 lbs of round steak cubed
2 tbsp oil
1/2 cup chopped onion
3/4 cup catsup
1/2 vinegar
3/4 cup water
1 tbsp brown sugar
1 tbsp prepared mustard
1 tbsp Worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
Cut the round steak in small pieces, removing all fat. Brown the meat in the 2 tbsp oil. Mix remaining ingredients together. Put browned meat in a casserole dish. Pour sauce over the meat. Cover and bake at 325 F for two hours
Over the 50 years since we graduated from high school I have modified the recipe a little in different ways at different times but still use the same basic recipe. I like to use sirloin steak instead of round steak and I usually use more onion, usually add some fresh mushrooms and depending on who is going to be eating it and where I am taking it, I sometimes add a couple of fresh seeded and deveined jalapenos to give it a little kick that I like very much. I sometimes use green chilies instead of jalapenos especially when the fresh ones from New Mexico are in season and available. I am quite sure that Mary would approve of the modifications I have made to her basic recipe and that she would enjoy it as much as I do.
Serve with rice, potatoes or with a tortilla and a glass of good iced tea or a cold beer if you prefer.
