Recipes: Chocolate pie

When you live in a little agricultural community populated with a lot of German families, German Chocolate desserts are found at a lot of town suppers or church suppers and always at bake sales.This is a little different twist on the classic chocolate pie. My high school classmates mother used to make this and we enjoy it every once in a while. We were together just a few weeks ago and his wife made a pie for us ad she cut down on the coconut and added more Pecans. Lee and I had a nice visit and agreed that his mother was one awesome cook who really spoiled us with good German food

GERMAN CHOCOLATE PIE

4 oz German sweet chocolate
1/4 cup butter
1 can (12 oz) evaporated milk
1 1/2 cups sugar
3 tbsp cornstarch
1/8 tsp salt
2 eggs
1 tsp vanilla extract
1 unbaked deep dish pie shell
1 1/2 cups coconut
1 cup pecans chopped

In a large saucepan, combine chocolate and butter. Melt over low heat. Remove from heat and blend in milk, set aside.

In a mixing bowl combine sugar, cornstarch and salt. Beat in eggs and vanilla.. Blend in melted chocolate and pour into pie shell. Combine coconut and pecans and sprinkle over the top of the pie

Bake at 375 F for 45 minutes.

I am a lot like my dad was as far as my love for coconut in things and I know that he would suggest that the recipe should be 1/2 cup of coconut and 2 cups of pecans. I would have to agree with that idea and even though German Chocolate things have coconut in them maybe we could call this "German Chocolate Pie Modified" When you make this whichever way you make it it is great with a big tablespoon full of home made whipped cream made from cream that was in the cow a few hours ago. . Fresh is definitely best.
