This salmon recipe is one of the easiest seafood recipes I know. It tastes nice in combination with some fresh steamed vegetables and with roasted potato wedges.
To serve four you will need:
- 1 tablespoon of olive oil
- 4 salmon fillets (150g)
- The juice of 1 lime
- 1 tablespoons of dill
- Salt and pepper
First preheat the oven to gas mark 8/230C/450F. Grease a baking dish with the olive oil and put the salmon in to rub the rest of the olive oil over it. Make sure that the whole salmon is covered.
Now put the skin-sides down and spoon the lime juice over. Sprinkle over the dill and cover lightly, if one tablespoon isn't enough add more. Now add a little bit of salt and pepper.
Put the baking dish in the oven for 10 to 12 minutes. Make sure you don't leave it in too long, because salmon is easily over-cooked.
Serve hot and for decoration you could use some lime wedges.
