On the go: Preparing a healthy breakfast in 5 minutes

I can't say that I'm not a morning person because I absolutely LOVE mornings. The leisurely, stay-at-home, come-to-life-slowly kind of mornings where it's OK to linger over coffee for hours. Whip up a breakfast fit for a king. Or queen, as the case may be.

Unfortunately, most of us understand that in order to maintain our castle, we must leave it occasionally to earn our daily bread. Or whatever.

And most of us had mothers and grandmothers who seemed happy to remind us that breakfast is the most important meal of the day. My concern has always been why the most important meal of the day was scheduled so inconveniently.

While I cannot reschedule the world to work around my beloved mornings of lingering indulgence, I have discovered a way to make a healthy breakfast that is ready in 5 minutes or less and is entirely suitable to be consumed in transit.

Sad but true.

I keep my favorite frozen fruits on hand. I buy them by the bag at reasonable prices from my local supermarket. I keep yogurt and soy milk in the refrigerator. I keep my blender on the counter next to the refrigerator.

I enjoy making my own yogurt but I understand not everybody wants to do that. When I'm caught off guard and don't have any homemade yogurt, I rely on yogurt I get from the supermarket that has as few additives as possible. I love candy but I love yogurt, too. I don't want to mix the two and diminish the pleasure of each.

But back to breakfast on the go . . .

I pour about a half a cup of soy milk and a cup of yogurt into the bottom of the blender. I add at least a cup of frozen fruit. Exact measurements waste time. Hit the "blend" button, pulse a time or two till all is smooth. Pour this gorgeously tasty breakfast concoction into a to-go cup, pop in a straw, and hit the road.

And I'm off. With a healthy breakfast on the go. Prepared in 5 minutes. Usually less.
