Recipes: Rice and peas

Peas Pilau is a South Asian rice dish. It gets it's flavor from fried onions and mild spices and can be accompanied by most curries, great for vegetarians. This recipe is so quick to make, once you eat it, you'll find it's very moreish.

That's the beauty of it, if you follow the recipe, you will get perfect rice every time. Just try it.

1 cup of Peas
1 large Onions (thinly sliced)
2 cups of raw Basmati Rice
2 cups of Water
1 tsp Garam Masala
1 tsp Salt
1/2 tsp Chili powder
6 tbsp olive oil

1.Boil the peas in unsalted water. Put to one side for now.

2.Put the sliced onions into a large oven-proof pot. Add the oil and fry until the onions are really dark and almost black.
(Approx 5 minutes)

4.Add in 2 cups of water and boil.
(Approx 1 minute)

5.Add Salt, Garam Masala and Chili powder to the pot and mix.
(Approx 2 minutes)

6.Add in the peas and mix.
(Approx 3 minutes)

7.Wash the raw rice thoroughly and add it into the pot, making sure to also add enough water to show about cm above the rice. Mix well.

8.Leave the rice on a high heat until the water dries up very slightly. There should still be enough water bubbling above the surface.
(Approx 2 minutes)

9.Place the whole pot with the lid in a preheated oven at 250 degrees. After EXACTLY 25 minutes take it out and mix gently.
(Approx 25 minutes)
