Usually, no. Here's why: There are three reasons that the difference between tap water and filtered water make a noticeable difference in the taste of coffee or tea. First, the tap water is so very bad that it would taint almost anything it was added to. For most of us, this is not the case. Second, the palette of the one drinking the coffee or tea is discriminating enough that the subtlety in the difference would be noticeable. For most of us, this is not the case. Third, the bean you selected is so mild, or the tea or coffee so weak, that really even a slight difference in the taste of the water would carry through to the end product. In a world of Starbucks and dark brews, coffees sweetened to the hilt that are only half coffee after all the cream and sugar and froth are added, and teas that are cultivated for their distinct flavors, this also does not apply the vast majority of the time.

So really, for the average person drinking what amounts to the "normal" cup of coffee or tea, then whether you used filtered or tap water will not matter. You do not need to worry about offending your guests, and you certainly needn't worry that you are missing out on anything yourself!
