Feta and artichoke red sauce
This pasta sauce is richer and different than your regular red sauce. It can be used with any pasta, but I've found it best complements penne. The sauce covers about a box of penne, and should serve 4.
You'll need:
1 small package of feta cheese crumbles
1 can chopped artichoke hearts
1 small can of tomato paste
1 clove of garlic
1/2 red onion
1 tomato
3 tablespoons of red sauce
2 chicken breasts (optional)
Start by cooking the chicken in a non-stick skillet over medium heat.
Boil a pot of water, add noodles. Strain when cooked.
While these are cooking, start chopping.
Drain the artichokes and cut each heart in half
Chop the onions and tomato.
Mince the garlic clove
When the chicken is nearly cooked through, add the artichokes, garlic and onion to the skillet. Cook for about 4 minutes, or until the onions and garlic have browned.
Add the cheese, tomato paste, tomatoes and red sauce.
Continue to cook at medium heat, stirring so cheese melts and pasta mixes evenly.
Serve the sauce over pasta on plates.
