If you have an outlook like mine then this is a holiday recipe. Whatever holiday you want it to be for, it will work. My thinking is "Everyday is a holiday,every meal is a banquet" Everyday that I wake up and am able to get out of bed is a blessing and a holiday to be celebrated. This recipe is easy and very good and requires no baking.

YUMMY FOR THE TUMMY REFRIGERATOR DESSERT

1 box of vanilla wafers (7 1/2 oz box)
3 tbsp melted butter
3 eggs
3 cups powdered sugar
1/2 tsp vanilla
1/2 cup butter, softened
2/3 cup pecans or walnuts, chopped
1 20 oz can crushed pineapple, drained
1/2 pint whipping cream, whipped
maraschino cherries to garnish

Crush the vanilla wafers. Mix half the crumbs with 3 tbsp melted butter and spread in the bottom of a 9" square dish. Beat the eggs until frothy and the add the powdered sugar vanilla and 1/2 cup of melted butter. Place the egg mixture over the crumbs. Sprinkle the nuts over the egg mixture, top with the crushed pineapple, then spread with whipped cream. Sprinkle the rest of the cookie crumbs on top. Refrigerate for at least 12 hours Garnish each serving with a maraschino cherry.

This make a cool and refreshing dessert for any occasion whether it be a holiday or not.
